Home for Dinner Project June 4th 2012

 With the days getting longer and the weather a pit warmer, we decided to take advantage of the big patio just off the dining room at Ronald McDonald House and Barbeque.  We had purchased some free range turkey burgers from Gor-Mart before they closed and build our menu for a Summer Barbeque.

June 4th Menu

Free Range Turkey Burgers

Garden Quinoa Burgers

Homemade *Mango Salsa

*Corn Relish Salad

*Creamy Cucumber Relish

*Raw Vegetable Relish

*Apple Cucumber Relish

*Mayonnaise

*Yogurt cheese

And Sautéed Mushrooms

Sautéed Onions

Garlicky Roasted Potato Salad

Fresh cut vegetables

With your choice of Homemade

Guacamole, Hummus and Black Bean Dip

Strawberry Rhubarb Crostata

With a lot of our volunteers in the middle of case studies, papers due and studying for final exams, it was hard to get enough hands for this dinner.


I thought we'd be OK ............ we had 4 people who could work the dinner.

Burgers are usually an easier thing to make but.............

Unfortunately Jodi called in sick

Laurie helped out for an hour and a half by cutting all the potatoes and cucumbers, but had to leave early 

So Karen and I took on the big job of getting this dinner accomplished.  I though we were doing OK till I looked at my watch and saw it was 4:30.  Yikes!!!! we only had the Corn Relish Salad, Creamy Cucumber Relish, Yogurt cheese, Garlicky Roasted Potato Salad and the Garden Quinoa Burgers were in the ovens - I put the Strawberry Rhubarb Crostata together while Karen worked on sauteing the Mushrooms and Onions.  Once the Rhubarb was in the oven, I went out to start the Barbeques and got the Turkey burgers going.  While I was cooking burgers, Karen was cutting up veggies, and getting the Island set up with what was prepared. 

Our dinners are to be ready for the residents by 5:30................................................ not so today.............................

With our apologies for being late - we had the first burgers coming off the barbeque at 6:05.

We did the best we could with the hands that were available - no Mango Salsa, No Raw Vegetable Relish, no Apple Cucumber Relish, no Mayonnaise, No Guacamole, no Hummus and no Black Bean Dip - we did supplied organic ketchup and a selection of mustard's.

The residents said it was worth the wait - everything was great, there was more then enough and a good selection.

With all the rush neither Karen or I took any pictures :^(

Karen and I were exhausted as we finished our cleanup and packed up to go home at about 9.
