Kale Quinoa Salad with oranges

Salad

1 bunch dark green or black Kale thinly sliced                                                                        1 red onion                                                                                                                                     2 organic  oranges - segmented and cut into small pieced                                                 2 cups cooked quinoa

Dressing

zest of 1/2 orange                                                                                                                          4 tbsp balsamic vinegar                                                                                                              2 tbsp sesame seed oil                                                                                                          Sea salt                                                                                                                                           Ground pepper

optional - top with 1 tbsp toasted sesame seeds

Wash and stem Kale, cut into very thin slices and place in salad bowl.  Slice red onion into rings, cut rings into segments and add to kale.  Add cooked quinoa (does not have to be completely cooked - it's heat will help soften the kale).  Zest 1/2 of the oranges before you add them to the salad and put zest aside for the dressing.  Peel, segment and cut oranges into small pieced and add to salad.

Make the dressing - Mix reserved orange zest, balsamic vinegar, and sesame seed oil, add salt and pepper to taste.  Pour over salad, nix well and allow it to marinade in refrigerator for 30 minutes before serving.  If using toasted sesame seeds place them in a shallow pan over med heat and toast till brown, allow to cool and sprinkle over each serving.  Serves 5-6 as a main meal.
